1. Spray the tuna steaks with a little 1-cal cooking spray, season well with salt and pepper on both sides and sear on a hot griddle for 1–2 minutes on each side. Set aside.

2. Place 40g of the rocket, the lemon zest and juice, the oil, mustard and half a tablespoon of water in a small jug blender. Season well and blend coarsely.

3. Boil the green beans for 2 minutes, add the edamame beans and boil for another minute or so, until just tender. Drain and refresh/submerge in cold water – this stops the cooking process instantly so the veg doesn’t go mushy.

4. Mix the tinned beans with the green and edamame beans, and stir through the rest of the rocket. Serve the bean salad with the seared tuna on top, drizzled with a little of the dressing.
